Fontainebleau is the one for interiors. See the Gallery of Francis I, the horseshoe staircase in the main courtyard, the rooms where Napoleon lived, and a large park with a carp pond.
Vaux-le-Vicomte is the one for gardens and for the story. Nicolas Fouquet built it in the 1650s, and after a lavish party in 1661 Louis XIV had him arrested. Its gardens, laid out by Le Nôtre, are full of tricks of perspective. The two châteaux show French royal taste before and after Louis XIV.
